Key Terms About Hyde Knives & Blades

If you want to know more about knives and blades, you might want to start by learning some key terms. Learning our industry’s jargon will help you make better purchases for your operations, factories, and workshops.
Back – The back of a knife is the part that’s opposite the blade or cutting edge.
Blade – The blade is the part of the knife that has a cutting edge. Blades are usually made from steel and are used to cut, scrape, shear, slice, and/or trim materials.
Camber – Camber is the bending of the cutting edge of a blade. Positive camber is when the cutting edge arcs backward. Negative camber is when the cutting edge arcs forward.
Edge – In the industry, “edge” refers to the cutting side of the knife’s blade. Edges can be serrated or scalloped. Some knives have two edges.
Gage – Gage refers to the blade’s thickness. “Gage” and “thickness” are used interchangeably.
Guard – Guard is a piece of metal attached to the hand knife where the blade meets the handle. Guards protect the user’s hand from slipping onto the blade during use.
Hardness – Hardness measures a blade’s ability to stay sharp, also known as “holding an edge.” Hardness is usually measured on the Rockwell “C” scale.
Pointed Blades – Pointed blades come with serrations or teeth on their edges.
Points – Points refer to the tips of a blade’s teeth.
Stainless Steel – Stainless steel is a steel alloy containing high quantities of chromium. Chromium makes steel more resistant to rust. Therefore, stainless steel knives are useful in the food processing and medical industries.
Toughness – Toughness refers to the amount of energy a blade can absorb without fracturing.
